The thirty-second answer
Serving a model is a systems problem with one unusual property: it can fail silently. Establish the serving mode first, because online inference behind a latency budget, batch scoring, and streaming are entirely different architectures. Treat the model as a versioned artifact deployed through the same pipeline as code, with the exact preprocessing used in training applied at inference — training-serving skew is the most common production bug. Batch requests to use accelerators efficiently, and cache where inputs repeat. Then monitor two distinct things: the service, with the usual latency, errors and saturation; and the model, with input distribution drift, prediction distribution shift, and delayed accuracy once ground truth arrives. Roll out with shadow traffic or a canary, because a model cannot be verified by a unit test.
